The dairy industry prepares milk for direct consumption, or turns it into butter or cheese. From the processing of milk gives a series of by-products such as buttermilk and whey, used for animal feed. The Italian production of cheese is not sufficient to cover the domestic needs for which, except for some cheeses such as Grana, Pecorino and Provolone, which are also exported, it is necessary to resort every year to import substantial quantities of this produced by France and England. The per capita consumption of cheese are among the highest in Europe and growing.
